Effects of chain length and saturation of triglycerides on cellular antioxidant activity of vegetable oil emulsions

Summary: In this study, the cellular antioxidant activity of alpha-tocopherol and gamma-oryzanol in different oil bases was investigated. The results showed higher CAA values for these antioxidants in coconut oil base compared to rice bran oil base. Further comparisons indicated that unsaturated triglycerides exhibited lower CAA values than saturated triglycerides, potentially due to susceptibility to oxidation reactions. These findings provide valuable insights for improving the stability of vegetable oils during production and processing.
