Analytical Platform for the Study of Metabolic Pathway of Propyl Propane Thiosulfonate (PTSO) from Allium spp.

Summary: The present study developed an analytical platform using GC-MS and UHPLC-Q-TOF-MS to analyze the metabolic pathway of PTSO from onion. Two different sample treatments, LLE and SALLE, were used for GC-MS and UHPLC-Q-TOF-MS analysis respectively. An in vivo study was conducted and revealed the presence of DPDS in liver and plasma samples, with highest concentration observed at 0.5 h after ingestion in liver and concentrations between 2.1 and 2.4 μg mL(-1) in plasma. PTSO was only found in plasma at times above 5 h and both PTSO and DPDS were excreted via urine 24 h after ingestion.

An experimental and theoretical study of ROS scavenging by organosulfur compounds from garlic: In silico analysis of metabolic pathways and interactions on CYP2E1

Summary: Using experimental and computational methods, this study analyzed the interactions between two organosulfur compounds (AMS and DAS) and reactive oxygen species (ROS), as well as their inhibitory effects on the CYP2E1 enzyme. Experimental results confirmed significant interaction between the compounds and H2O2, O-2(center dot -), and O-2((1)Delta(g)). Computational analysis suggested a high probability of the compounds acting as CYP2E1 inhibitors. Molecular docking revealed strong interactions between the sulfur and oxygen atoms of the compounds and the heme iron ion.

Seeing the smell of garlic: Detection of gas phase volatiles from crushed garlic (Allium sativum), onion (Allium cepa), ramsons (Allium ursinum) and human garlic breath using SESI-Orbitrap MS

Summary: A study used gentle secondary electrospray ionisation coupled Orbitrap mass spectrometry procedure (SESI-Orbitrap MS) to measure the gas phase concentration of evaporated allicin from a pure solution. Two major breakdown products of allicin were found. This technique can be used to track the chemistry of allicin, isoallin, and methiin in garlic, onion, and ramsons, as well as measure allicin and its metabolites in human breath after garlic consumption. The results are significant for analyzing sulfur-containing volatiles from Allium plants and capturing volatilomes of foodstuffs.

Summary: This study analyzed the antibacterial and antiparasitic potential of propyl-propane-thiosulfinate (PTS) and propyl-propane-thiosulfonate (PTSO) from onions, and applied them to gilthead sea bream. The results showed that PTS and PTSO had inhibitory effects on target bacteria and Sparicotyle chrysophrii larvae, and including them in the diet helped prevent fish diseases.
