Development of a novel non-water infrared refractance window drying method for Malabar spinach: Optimization of process parameters using drying kinetics, mass transfer, and powder characterization

P. Durgawati et al.

Summary: In this study, a new method called non-water Infrared Refractance Window drying (IR-RWD) was developed for drying Malabar spinach. The vacuum steam pulsed blanching (VSPB) method was used to pretreat the spinach. The results showed that VSPB effectively inactivated POD and PPO activities, and the optimum drying conditions were determined.

Prediction of mass transfer parameters and thermodynamic properties using the refractance Window™ technique for drying of Yam (Dioscorea Trifida) paste

Samiria de Jesus Lopes Santos et al.

Summary: This study investigated the drying process of Dioscorea trifida and found it to have high dehydration rate and mass transfer coefficient. The mass transfer process became more efficient with increasing temperature. Additionally, the process was found to be endothermic rather than spontaneous.

Physicochemical and nutritional properties of pomegranate juice powder produced by spray drying

Malihe Ghalegi Ghalenoe et al.

Summary: The research analyzed the physicochemical and nutritional characteristics of pomegranate juice powder, finding that maltodextrin level and inlet air temperature influenced all properties of the final powder. Lower maltodextrin levels and higher inlet air temperatures resulted in smaller but smoother particles.

Effect of fluidized-bed and freeze-drying techniques on physicochemical, nutritional, thermal, and structural properties of Moringa oleifera flowers, leaves, and seeds

K. M. Manju et al.

Summary: The study evaluated the effects of fluidized bed drying and freeze-drying on the physicochemical, nutritional, thermal, and structural properties of Moringa oleifera. Germination and fermentation of seeds were found to improve their quality, while freeze-dried Moringa leaves and flowers retained better nutrition and antioxidant activities. Overall, the combination of different processing operations enhanced the properties of Moringa oleifera powder, making it a potential functional ingredient for novel food and pharmaceutical development.
