Comparison of characterization and antioxidant activity of different citrus peel pectins

Summary: The properties of citrus peel pectins (CPPs) obtained from different cultivars and growth regions were compared. The physicochemical features of CPPs were investigated, including molecular weight distribution, monosaccharide composition, thermal behaviors and flow behaviors. It was found that different cultivars and growing areas had significant effects on CPPs. Some CPPs exhibited superior antioxidant activity, while others showed excellent functional properties. The study also identified the factors that contributed to the thermal stability and viscosity of CPPs, as well as their antioxidant activity.

Effect of k-carrageenan on the gelation properties of oyster protein

Summary: This study investigates the effects of x-carrageenan on the rheological behavior, network structure, textures, and molecular force of oyster protein treated with high-pressure homogenization. The results show that x-carrageenan improves the storage modulus of oyster protein and accelerates the gelation process, enhancing gel strength and forming a compact network structure.

Nano and microencapsulation of bacteriocins for food applications: A review

Summary: The increasing demand for prolonging food shelf life and inhibiting food spoilage and pathogenic microorganisms has led to the development of novel biopreservatives and conservation methods. Antimicrobial peptides derived from microorganisms are being considered as a major alternative to chemical preservatives in food products. Nano- or microencapsulation processes can protect these biopreservatives and efficiently prevent microbial contamination and food spoilage. This review focuses on various encapsulation methods for antimicrobial bacteriocins, with emphasis on their applications in dairy, meat products, and fruit juice.
