Quantifying cooperative flow of fat crystal dispersions

High-resolution rheo-magnetic-resonance-imaging (rheo-MRI) velocimetry measurements are used to characterize the flow in these optically-opaque materials. The results show that FCDs with particular aggregate sizes exhibit cooperativity effects. The study's method and findings have important implications for the study of flow in similar materials.
