Bioaccessibility and Potential Biological Activities of Lutein, Glucosinolates, and Phenolic Compounds Accumulated in Kale Sprouts Treated with Selenium, Sulfur, and Methyl Jasmonate

Summary: This study evaluated the individual and combined effects of Se, S, and MeJA on the content of health-promoting compounds in Red Russian kale sprouts. The results showed that Se treatment increased glucosinolates and lutein levels in kale sprouts. In vitro digestion led to the release of lutein but caused significant losses of phenolics and glucosinolates. Se treatment preserved the concentration of certain glucosinolates in kale. Furthermore, Se-treated kale showed higher cellular antioxidant activity and NOx production.

Novel Peptides in Fermented Milk with Specific Lactobacillus Strains Potential Antiobesity Effect: In Vitro and in Silico Analysis

Summary: The potential antiobesity effect of fermented milks (FMs) with specific strains of Lactobacillus isolated from artisanal Mexican cheeses was investigated. FMs with Limosilactobacillus fermentum J20 (J20) displayed the highest pancreatic lipase inhibitory activity (PLIA) and inhibited lipid accumulation in cells. Peptide identification revealed eight novel sequences that strongly bind enzyme active sites and could be responsible for the antiobesity effect. FM J20 may be used for the development of a dairy product with antiobesity effects.

Technologies for the Use and Consumption of Sweet Potato Leaves and Their Bioactive Compounds

Summary: Sweet potato, originally from America, is now primarily produced and consumed in Asia and Africa. It is cultivated for its tubers, which are rich in carbohydrates, minerals, and vitamins. Sweet potato leaves are also consumed in Taiwan and China, and their bioactive compounds have been studied for their potential health benefits. Promoting the consumption of sweet potato leaves in Central America could help address health problems caused by poor eating habits.

Comparison of Minerals,Ferulic Acid,Antioxidant,and Anti-inflammatory Properties of Products from Raw Maize and Germinated Maize with Selenium

Summary: In this study, maize kernels were hydrated with sodium selenite and subjected to germination and nixtamalization. The mineral composition and antioxidant/anti-inflammatory activities of the resulting products were analyzed. The Se-germinated maize kernels exhibited higher bound ferulic acid content, cellular antioxidant activity, and anti-inflammatory activity compared to germinated maize kernels. Additionally, the nixtamal, nejayote, and tortilla made from raw maize showed the highest levels of antioxidant and anti-inflammatory activities among all samples.

Technological Properties of Orange Sweet Potato Flour Intended for Functional Food Products as Affected by Conventional Drying and Milling Methods

Summary: The aim of this study was to evaluate the effect of drying temperature and grinding pattern on the properties of orange sweet potato flour (OSPF) and to define its potential application in functional food products. The results showed that drying at different temperatures and using different grinding patterns had significant effects on the hydration, thermal, and pasting properties of OSPF. The combination of drying temperature and grinding pattern was found to be important in determining the technological properties of OSPF.

Development of a Functional Fermented Milk by Using Single or Multistrain Potential Probiotic Cultures

Summary: The aim of this study was to evaluate the milk fermentation capacity, antioxidant, and anti-inflammatory properties of six specific Lactobacillus strains. The results showed that the Lp39 strain exhibited higher antioxidant activity and relevant anti-inflammatory properties in the fermented milk.
