Encapsulation of phenols of gulupa seed extract using acylated rice starch: Effect on the release and antioxidant activity

Summary: Modified starches can form hydrophobic conglomerates that resist enzymatic degradation, making them suitable for encapsulation of compounds. This study evaluated enzymatically acylated rice starch as a wall material for encapsulation and release, with a focus on the antioxidant activity of phenolic compounds. The results showed promising trapping efficiency and maintenance of antioxidant activity, with significant differential behavior depending on the compound.
