Summary: This study optimized the extraction of bioactive compounds from red grape Babeasca neagra peels using a Central Composite Design and conventional solvent extraction. The effects of extraction factors such as ethanol and citric acid concentrations, extraction temperature, and duration on anthocyanin content, total phenolic content, and antioxidant activity were investigated. By establishing optimal operating conditions, the extraction process can be improved and value-added extracts from red grape peel can be obtained.
