Tenebrio molitor as a source of interesting natural compounds, their recovery processes, biological effects, and safety aspects

Simona Errico et al.

Summary: This article discusses the potential role of Tenebrio molitor in sustainable and circular solutions to the growing needs for food and nutrients, analyzing high-value products, recovery processes, nutritional and economic values, safety aspects, and other considerations. While the potential of TM is undeniable, further discussions on health effects, optimal production conditions, and conversion of by-products are needed. Additionally, environmental, economic, social, and market feasibility studies are necessary to analyze new value chains, and overcoming cultural, psychological, and regulatory barriers in Western countries is crucial to unlock the enormous potential of edible insects.

Effects of organic solvent on functional properties of defatted proteins extracted from Protaetia brevitarsis larvae

Tae-Kyung Kim et al.

Summary: The study found that defatting with n-hexane resulted in the highest efficiency and best technical properties of the extracted proteins, while defatting with ethanol could achieve similar foam and emulsifying capacities. The surface hydrophobicity of proteins decreased with the use of organic solvents, and excessive fat content disrupted their functional properties.

How does the thermal-aggregation behavior of black cricket protein isolate affect its foaming and gelling properties?

Livia A. Santiago et al.

Summary: This study evaluated the impact of heat treatments on the structure, gelling, and foaming properties of black cricket protein isolate (BCPI), showing that heat treatments can alter the hydrophobicity of proteins and that the presence of NaCl can reduce the alpha-helix structure content. Additionally, BCPI demonstrated similar foamability and critical gelling concentration to whey protein isolate (WPI), indicating its potential for food applications.

Effects of salting-in/out-assisted extractions on structural, physicochemical and functional properties of Tenebrio molitor larvae protein isolates

Yongli Jiang et al.

Summary: The protein isolates extracted from Tenebrio molitor larvae using salt-assisted methods showed improved functional properties such as higher protein solubility, emulsion activity, and foaming capacity. Salting-in-AEAP and salting-out-AEAP procedures had minimal effects on the physicochemical properties of TPIs.

Effects of High Hydrostatic Pressure assisted degreasing on the technological properties of insect powders obtained from Acheta domesticus & Tenebrio molitor

Berkay Bolat et al.

Summary: This study focused on defatting two edible insect species using High Hydrostatic Pressure (HHP) extraction at different temperatures and analyzed the impact on the functional properties of the insect powders. The results showed that temperature increase led to a decrease in protein solubility, but HHP was found to be effective for defatting and improving the functional properties of the powders for potential use as food additives.

Summary: Insects, particularly the Black Soldier Fly, are increasingly important protein sources, with their protein and amino acid content varying based on the substrate they are reared on. The use of different substrates affects the protein content, with significant differences observed in the protein fraction based on the rearing substrate, particularly noticeable in autumnal and fruit by-products.
