Summary: Global meat consumption is increasing while supply is lacking. Alternative protein sources, including cultured meat, plant-based protein, and edible insects, have been proposed. Edible insects are characterized by superior digestive and absorptive qualities. This study investigated the effects of different pre-treatment methods on protein extracted from Hermetia illucens larvae. Blanching and superheated steam pre-treatments were found to be the most effective methods to improve processing properties.

This study suggests that egg yolk protein hydrolysates can be used as functional food ingredients with immunomodulatory activity in the food industry.

Immunostimulatory activity of stem bark of Kalopanax pictus in RAW 264.7 macrophage

Summary: This study aimed to investigate the immune-enhancing effects of hot water extracts from Kalopanax pictus stem barks on mouse macrophage RAW 264.7 cells. The results showed that the extracts significantly increased the production of nitric oxide and upregulated the levels of enzymes and cytokines related to immune responses. Furthermore, the extracts enhanced the phagocytic activity of the cells.

The alkalisation-piezoelectric ultrasound method improved the solubility and techno-functional properties of the grasshopper protein. The sensory evaluation indicated that a formulation with 5% meat substitution was as acceptable as the control sample. Therefore, the soluble protein treated with alkalisation and piezoelectric ultrasound could be used as an extender in meat products.
