Comparative assessment of compositional constituents and antioxidant effects in ginseng sprouts (Panax ginseng) through aging and fermentation processes

Summary: This research demonstrates the fluctuations in compositional constituents and antioxidant effects during aging and fermentation processes of dried ginseng sprouts. The study compares the influential factors on antioxidant and physicochemical properties, showing decreases in amino acids and volatiles, as well as an increase in certain compounds such as deglycosilated ginsenoside F2 and compound K. The antioxidant capacities also increased significantly, with processed ginseng sprouts showing higher values of total phenolic content, total flavonoid content, and maillard reaction products.

Optimization of Cultivation Type and Temperature for the Production of Balloon Flower (Platycodon grandiflorum A. DC) Sprouts in a Plant Factory with Artificial Lighting

Summary: The objective of this study was to determine the efficiency of balloon flower sprout's saponin production in a plant factory with artificial lighting. The results showed that a soilless culture system with temperature conditions at 20 and 25 degrees C is suitable for improving the growth and saponin concentration of balloon flower cultivated in PFALs. These findings provide valuable information for the production of medicinal plants and enhancing the growth and bioactive compounds in balloon flower.
