Water Adsorption Thermodynamical Analysis and Mechanical Characterization of Chitosan and Polyvinyl Alcohol-Based Films

Summary: The study demonstrated that chitosan and polyvinyl alcohol films prepared by the casting method exhibited moisture adsorption isotherms well-fitted by the GAB model. Thermodynamic analysis revealed a minimum integral entropy at specific water activity levels for all films. Pore radius values of the films indicated classification into micropores and mesopores. Compensation enthalpy-entropy in films showed enthalpy-driven water vapor adsorption at low water activity levels. Most mechanical properties remained constant at the zone of minimum integral entropy, confirming the potential use of thermodynamic properties for predicting film stability in food packaging materials.
