Summary: The growth pattern of probiotics can be modified by changing their nutritional factors and physiological stage. High intensity ultrasound (HIUS) can increase the biomass of probiotics. The study investigated the influence of growth medium, culture age, and ultrasound parameters on the kinetic parameters of L. acidophilus. The results showed significant effects of culture age, ultrasound parameters, and skim milk as a growth medium on the growth of L. acidophilus. These findings are important for the industrial production of probiotics.

Summary: Moderate ultrasound treatments can enhance metabolic and probiotic activities of Lactobacilluse brevis, resulting in higher cell counts, growth rate, and protein hydrolysis, while also increasing GABA yield. However, higher ultrasound intensity can be detrimental to Lb. brevis, decreasing metabolic activity and GABA yield. Further studies are needed to fully understand the effects of ultrasound on Lb. brevis cells.
