The Role of Amaranth, Quinoa, and Millets for the Development of Healthy, Sustainable Food Products-A Concise Review

Gayathri Balakrishnan et al.

Summary: The selection of sustainable crops that can adapt to the changing environment and meet the dietary needs of a growing population is a primary challenge in ensuring food security. Ancient grains such as amaranth, quinoa, and millets have gained prominence due to their nutritional value and energy efficiency. Their diverse nutritional profile, including complete protein, bioactive peptides, and essential micronutrients, makes them a preferred choice for developing healthy and sustainable food products.

Evaluation and Dietary Exposure Assessment of Selected Toxic Trace Elements in Durum Wheat (Triticum durum) Imported into the Italian Market: Six Years of Official Controls

Ciro Pompa et al.

Summary: Durum wheat grains, commonly used in pasta and baked goods, are a major source of vegetable proteins and calories, but may also accumulate toxic trace elements. A study on durum wheat imported into the Italian market from six countries showed that while all samples met regulations, products based on durum wheat could significantly impact exposure to lead and cadmium, especially in sensitive populations.
