Influence on the aroma substances and functional ingredients of apple juice by lactic acid bacteria fermentation

Summary: This study aimed to analyze the influence of lactic acid bacteria fermentation on the aroma composition and functional composition of apple juice. Lactobacillus reuteri was selected to ferment apple juice, and HS-SPME-GC-MS and HPLC were used to analyze the changes of volatile aroma composition, organic acids and phenols after fermentation. The results showed that the best fermentation time was about 18 h. The type and content of volatile substances in the fermented juice changed and affected the overall aroma, and the content of organic acids and polyphenols increased, enhancing the antioxidant capacity and functionality of the juice. This study demonstrated the positive effect of fermentation on apple juice and provided a reference for further research.

Summary: The study aimed to demonstrate the preventive effects of Moringa oleifera leaves extract on protein glycation and its renoprotective effect in diabetic rats. The study found that the extract efficiently prevented glycation of protein and improved glucose metabolism and renal function in diabetic rats. It also showed anti-inflammatory and antioxidant effects. Therefore, Moringa oleifera leaves could be a potential therapeutic intervention for the management of diabetic nephropathy.

Summary: Using mixed strains in solid-state fermentation can significantly alter the chemical composition and metabolite content of Moringa leaf flour, with most metabolites showing higher concentrations after 3 days of fermentation. A total of 347 metabolites were identified through GC-TOF-MS analysis, including several intermediate metabolites detected in the 3-day fermented Moringa leaf flour. The metabolic activity of mixed microorganisms appears to peak after 3 days of fermentation under the tested conditions.

The extract is safe and significantly reduces inflammation, with major compounds derived from apigenin, quercetin, and kaempferol glycosides.

Glabridin attenuates atopic dermatitis progression through downregulating the TLR4/MyD88/NF-κB signaling pathway

Immunohistochemistry staining showed GB to reduce AD progression by impeding TLR4 expression.
