Effects of monosaccharide composition and acetyl content on the rheological properties of sphingan WL

Summary: This study investigated the relationship between the molecular structure and rheological performance of sphingan WL with different monosaccharide compositions, molecular weight, and functional groups. The results showed that different strains and partial hydrolysis could affect the viscosity and viscoelasticity of WL. Furthermore, the acetyl content also influenced the rheological properties, with higher acetyl content leading to higher G' and G'' values but lower viscosity. The gel structure of WL samples with low acetyl content was less sensitive to salt.
