Summary: This study analyzed the influence of different production systems in the Eastern Amazon on the nutritional composition of water buffalo meat. The results showed that meat from buffaloes reared in the Marajo Island extensive system during the rainy season had higher nutritional value, with lower cholesterol levels and higher amounts of alpha-tocopherol. This meat also had lower levels of saturated fatty acids and higher amounts of mono- and polyunsaturated fatty acids, making it more beneficial for human health.
