Prediction of wheat flours composition using fourier transform infrared spectrometry (FT-IR)

Summary: This study analyzed the physicochemical characteristics of different species of wheat flour and found significant differences between ancient and common wheat species in terms of protein, wet gluten, fat, ash, and acidity. Common wheat had higher starch content and the highest stretching and relaxation Glutograph values. Fourier transforms infrared (FTIR) spectroscopy was used to analyze the composition of wheat flour, and spectral pre-treatment improved the prediction of wheat physicochemical parameters.

Genetic Diversity and Physicochemical Characteristics of Different Wheat Species (Triticum aestivum L., Triticum monococcum L., Triticum spelta L.) Cultivated in Romania

Summary: This study analyzed the genetic diversity and physicochemical properties of 31 wheat varieties cultivated in Romania. The physicochemical data showed large variability among the wheat samples. Principal component analysis revealed associations between the physicochemical properties of wheat flour and the different wheat species. The genetic diversity of the wheat cultivars was analyzed using ISSR markers, and high diversity was observed among all the wheat varieties.

Yield and Grain Quality of Common Wheat (Triticum aestivum L.) Depending on the Different Farming Systems (Organic vs. Integrated vs. Conventional)

Summary: The yield and quality of wheat grain are influenced by genotype (cultivar), soil and climatic conditions, agrotechnology, and their interaction. The aim of this study was to compare the yield and grain quality of four wheat cultivars grown under organic, integrated, and conventional farming systems. The results showed that the highest grain yield was obtained under the integrated farming system, while the lowest was obtained under the organic farming system. The physicochemical and rheological characteristics of the grain were significantly influenced by the cultivar factor and, to some extent, by the farming system.

Wheat Germ and Lipid Oxidation: An Open Issue

Most alternative cereals and pseudocereals are suitable for brewing practices, but some require special treatment.

Impact of Germination on the Microstructural and Physicochemical Properties of Different Legume Types
