Phenolic Acid Content and Antioxidant Properties of Edible Potato (Solanum tuberosum L.) with Various Tuber Flesh Colours

Summary: The aim of the study was to evaluate the phenolic acid content and antioxidant properties in potato cultivars with coloured flesh and bright flesh. It was found that potato cultivars with coloured flesh had higher levels of phenolic acids and better antioxidant properties compared to bright-fleshed potato cultivars.

Multiplex CRISPR-Cas9 Gene-Editing Can Deliver Potato Cultivars with Reduced Browning and Acrylamide

Summary: CRISPR-Cas9 technology was used to edit the VInv and AS1 genes of potato cultivars Atlantic and Desiree, resulting in reduced accumulation of reducing sugars and production of asparagine after cold storage. This led to the production of healthier processed potato products with lower acrylamide content.

Determination of Bioactive Compounds, Antioxidant Capacities and Safety of the Somatic Hybrid Potatoes

Summary: Somatic hybrids produced through intraspecific fusion of potato cultivars Cardinal and Nicola showed higher levels of bioactive compounds and antioxidant activities. The analysis of peel and flesh compartments revealed different compositions of phenolic compounds and pigment content. The somatic hybrids had similar levels of phenolic compounds to cv. Nicola but exhibited increased antioxidant capacity. The study confirmed the safety of these hybrid tubers for human consumption.

Summary: Senescent sweetening in potato tubers leads to the accumulation of reducing sugars during long-term storage, causing issues in processing. Contrary to previous studies, our analysis found no correlation between oxidative stress and reducing sugar accumulation. Transcriptional profiling revealed changes in carbohydrate metabolism at the onset of sweetening, potentially linked to reduced capacity of plastids to import glucose-6-phosphate.
