Validation of Layer-By-Layer Coating as a Procedure to Enhance Lactobacillus plantarum Survival during In Vitro Digestion, Storage, and Fermentation

Summary: A layer-by-layer coating method using whey protein isolate fibrils and sodium alginate, carboxymethyl cellulose, or xanthan gum was developed to improve the survival rate of Lactobacillus plantarum in simulated digestion, storage, and fermented blueberry juices. The coated Lactobacillus remained stable after fermentation and exhibited higher survival rates in simulated digestion and storage compared to uncoated counterparts. The formation mechanism of the coating process was explored, revealing the involvement of electrostatic interactions and hydrogen bonding. This approach has great potential in protecting and delivering probiotics in food systems.

Fabrication of starch-based emulsion gel beads by an inverse gelation technique for loading proanthocyanidin and curcumin

Summary: In this study, large-scale emulsion gel beads were fabricated using an inverse emulsion gelation technique, with dual loading of proanthocyanidin and curcumin achieved by simple starch retrogradation. Increasing the starch concentration resulted in higher hardness and lower swelling ratio of the gel beads under different treatment conditions. Furthermore, the starch-based emulsion gel beads showed a lower release ratio of proanthocyanidins and curcumin in simulated gastric fluid, indicating their tolerance to the gastric environment. However, when the starch gel network was disrupted in simulated intestinal fluid, a large amount of proanthocyanidins and curcumin were released from the beads. Therefore, starch-based emulsion gel beads are ideal carriers for loading hydrophilic and hydrophobic active ingredients.

The shape and mechanical properties of the hydrogel beads were controlled by adjusting the concentration of copper ions and the amount of biopolymers used. The synthesized hydrogel beads showed high removal capacity for methylene blue, indicating their potential application in wastewater treatment.

Characterization and in vitro digestibility of potato starch encapsulated in calcium alginate beads

Summary: In this study, double emulsions encapsulated by calcium-alginate hydrogel beads system (ACGs) were developed for intestinal-targeted delivery of probiotics. The experimental results showed that ACG-2 and ACG-3 hydrogel beads had sustained release properties in simulated intestinal fluid and high cell viability. Moreover, the alginate concentration in ACGs hydrogel beads influenced the swelling behavior and structure, thus mediating the release of probiotics.

Summary: An injectable polypseudorotaxane hydrogel was developed for sustained release of LMWH, which showed good biocompatibility and could be tuned for desired properties and release rate by adjusting the α-CD concentration in the hydrogel. The hydrogel exhibited shear-thinning and thixotropic behavior and could sustain release of LMWH after subcutaneous injection.
