Effects of pulse electric field pretreatment on the frying quality and pore characteristics of potato chips

Cheng Zhang et al.

Summary: This study investigates the effect of pulsed electric field (PEF) treatment on the oil absorption capacity of potato chips by evaluating changes in microstructure and pore characteristics. Results show that higher electric field strengths lead to collapsed cell walls in the potato chips, denser pores, and reduced oil absorption during frying.

Mitigation of Acrylamide in Potato Chips by Pre-drying and Pulsed Electric Field Treatment

Caiyun Liu et al.

Summary: This study examined the effects of preliminary vacuum drying, pulsed electric field treatment, and frying temperature on the quality of fried potato chips. The results showed that PEF pre-treatment and preliminary VD application synergistically reduced acrylamide content and improved color and oil uptake in the chips.

Inhibitory effect of polysaccharides on acrylamide formation in chemical and food model systems

Ornicha Champrasert et al.

Summary: The study found that alginate and pectin can effectively inhibit the formation of acrylamide, with better performance under conventional heating, while chitosan has a relatively weaker inhibitory effect. Alginate and pectin also slightly reduced acrylamide formation under microwave heating.

Influence of pulsed electric field (PEF) and ultrasound treatment on the frying behavior and quality of potato chips

R. Ostermeier et al.

Summary: The study investigated the effects of PEF and US on the frying behavior of potato chips. By analyzing water vapor bubbles and bubble volume distribution, insights into heat and mass transfer were gained. The results demonstrate the impact on the frying process by combining PEF and US, providing potential optimization for chip production processes.

Effects of combined pulsed electric field and blanching pretreatment on the physiochemical properties of French fries

Cheng Zhang et al.

Summary: The study examined the effects of combining PEF with blanching pretreatment on the physiochemical properties of French fries, finding that the pretreated fries were brighter, softer, and had more uniform moisture and oil content distributions. The combined pretreatment also resulted in improved food safety with lower colony counts and acrylamide content in the fries. The findings suggest that the combination of PEF and blanching could be a beneficial method for enhancing the aesthetic appeal and organoleptic properties of fried potato foods.
