Biodegradable gelatin-based films with nisin and EDTA that inhibit Escherichia coli

Romina L. Abarca et al.

Summary: This study developed gelatin-based active packaging films that are biodegradable and capable of inhibiting E. coli. By utilizing a nisin-EDTA mixture at different concentrations distributed in the polymer matrix, significant antimicrobial effects were achieved. Additionally, the biodegradability of the films was demonstrated, providing a promising option for perishable food applications.

Gelatin-based films activated with red propolis ethanolic extract and essential oils

L. M. Reyes et al.

Summary: The study found that films containing clove essential oil exhibited the best antioxidant activity, while red propolis ethanolic extract only showed antimicrobial activity against Gram(+) bacteria. Additionally, red propolis ethanolic extract played a crucial role in affecting the UV/visible light barrier and thermal properties of the films.

From Cheese-Making to Consumption: Exploring the Microbial Safety of Cheeses through Predictive Microbiology Models

Aricia Possas et al.

Summary: Cheeses are traditional products consumed worldwide, but are also frequently implicated in foodborne outbreaks. Predictive microbiology models are important tools for estimating microbial behavior in cheeses, with Listeria monocytogenes being the main target of concern. Factors such as pH, a(w), lactic acid concentration, and temperature are key independent variables in these models.

The control of cheese and meat product spoilage fungi by sanitizers: In vitro testing and food industry usage

Angelica Olivier Bernardi et al.

Summary: This study analyzed the antifungal capacity of different sanitizers allowed in the food industry against species involved in the spoilage of dairy and meat products. It found that the commonly used sanitizers in the food industry have certain resistance against spoilage fungi isolated from meat products, with the lowest concentration specified in the product label being ineffective. Peracetic acid was identified as the most commonly used and most effective sanitizer, especially against cheese spoilage species.

Elucidation of Mechanical, Physical, Chemical and Thermal Properties of Microbial Composite Films by Integrating Sodium Alginate with Bacillus subtilis sp.

Charles Ng Wai Chun et al.

Summary: The study found that films reinforced with Bacillus subtilis significantly improved various properties, with the 0.5g microbial composite films exhibiting the highest tensile strength, breaking strain, toughness, conductivity, and water absorption ability. Additionally, the microbial composite films had higher melting and decomposition temperatures, and the potential to be used in electronic applications due to increased conductivity with higher Bacillus subtilis cell mass.

Antifungal Efficacy of Redox-Active Natamycin against Some Foodborne Fungi-Comparison with Aspergillus fumigatus

Jong H. Kim et al.

Summary: The fungal antioxidant system is targeted by redox-active polyene antifungal drugs like NAT, and its efficacy is influenced by pH and food ingredients. While NAT shows higher activity against human pathogens at pH 5.6, it is more effective against foodborne fungi at acidic pH, with food ingredients playing a greater role in impacting NAT efficacy in commercial food matrices.
