Effect of enzymatic hydrolysis on volatile flavor compounds of Monascus -fermented tartary buckwheat based on headspace gas chromatography-ion mobility spectrometry

Summary: Tartary buckwheat was hydrolyzed with alpha-amylase, pullulanase, alpha-amylase, pullulanase double enzymes, and fermented by Monascus. The composition and content of volatile flavor compounds in the fermentation products were investigated. The results showed significant changes in the volatile substances and increased aroma components in the enzymolysis-Monascus-fermented tartary buckwheat.

Dynamic changes of non-volatile compounds and evaluation on umami during infrared assisted spouted bed drying of shiitake mushrooms

Summary: This study investigates the dynamic changes of non-volatile components and umami evaluation of shiitake mushrooms during infrared-assisted spouted bed drying (IRSBD). The results show that the drying temperature has a significant effect on drying characteristics, while airflow speed affects the flavor components. The optimal conditions for dehydrating shiitake mushrooms and producing high-quality dried products with rich flavor are a temperature of 55°C and airflow speeds of 8.0-8.5 m/s.

HS-SPME-GC-MS and OAV analyses of characteristic volatile flavour compounds in salt-baked drumstick

Summary: The volatile flavor compounds of salt-baked drumsticks were analyzed using HS-SPME and GC-MS. A total of 56, 67, and 62 flavor compounds were detected in the water-baked drumsticks, salt-baked drumsticks, and self-manufactured salt-baked drumsticks, respectively. A combination of aroma threshold and OAV theory identified 19 volatile components as the main source of aroma. This research provides a foundation for further investigation into the formation mechanism and influence of salt-baked drumsticks.
