Effects of mixed fermentation of different lactic acid bacteria and yeast on phytic acid degradation and flavor compounds in sourdough

Summary: This study examined the use of single-strain and mixed fermentation to prepare type II sourdough and evaluate its impact on sourdough quality and volatile flavor compounds. Mixed fermentation reduced the number of lactic acid bacteria and yeasts, as well as the acidity. However, it increased the content of acetic acid and decreased the content of lactic acid. Mixed fermentation also enhanced the degradation of phytic acid, reaching up to 96.6% degradation.

Gluten-free flour fermented with autochthonous starters for sourdough production: Effect of the fermentation process

Summary: In this study, refined rice flour and wholegrain quinoa and buckwheat flours were used to prepare gluten-free sourdoughs. Two autochthonous LAB strains were isolated and fermented the dough, resulting in significant changes in flour properties and increased polyphenol extractability and antioxidant activity. The single-step fermentation was shown to be a simple and effective method for improving flour properties.

Identification of novel antioxidant peptides from snakehead (Channa argus) soup generated during gastrointestinal digestion and insights into the anti-oxidation mechanisms

Summary: Research on antioxidant peptides derived from snakehead soup after simulated gastrointestinal digestion revealed that peptides with molecular weight less than 3 kDa exhibited the highest antioxidant capacity. Four novel antioxidant peptides were identified, with PGMLGGSPPGLLGGSPP and SDGSNIHFPN showing strong DPPH radical scavenging and Fe2+ chelating abilities. Molecular docking results suggested potential interaction with Keap1, indicating involvement in the cellular anti-oxidation pathway.

Identification of dominant lactic acid bacteria and yeast in rice sourdough produced in New Zealand

The acidity of the dough increased significantly during fermentation, resulting in a crust color similar to unleavened wheat bread. The combined use of sourdough technique and optimal baking conditions may improve the color of the rice sourdough bread crust, allowing bakers to enhance the overall quality of gluten-free rice sourdough baked bread.
