Summary: This study focused on improving the stability of Zanthoxylum bungeanum essential oil (ZBEO) using microencapsulation. The optimal conditions for microcapsule preparation were determined, and application of ZBEO microcapsules in Chinese-style sausage effectively inhibited lipid oxidation and protected volatile compounds during storage. The research indicated that microencapsulation is an effective strategy for enhancing the stability of bioactive components in ZBEO during food processing.

Antifungal and Antiaflatoxinogenic Effects of Cymbopogon citratus, Cymbopogon nardus, and Cymbopogon schoenanthus Essential Oils Alone and in Combination

Summary: This study investigated the antifungal and antiaflatoxinogenic activities of essential oils from different species of Cymbopogon plants. The results showed that these essential oils exhibited inhibitory activities against Aspergillus species and could also inhibit the synthesis of aflatoxins. Combinations of different essential oils showed synergistic effects, and some combinations were able to completely inhibit the production of aflatoxins.

Synthesis, characterization and in situ bioefficacy evaluation of Cymbopogon nardus essential oil impregnated chitosan nanoemulsion against fungal infestation and aflatoxin B1 contamination in food system

Summary: In this study, Cymbopogon nardus essential oil impregnated chitosan nano-emulsion (Ne-CNEO) was successfully synthesized and its efficacy as a green delivery system for the protection of Syzygium cumini seeds against storage fungi, aflatoxin B-1 (AFB(1)) secretion, and lipid peroxidation was demonstrated. Ne-CNEO showed enhanced antifungal, anti-aflatoxigenic, and antioxidant activity compared to CNEO. The mechanism of action involved inhibition of ergosterol biosynthesis, leakage of cellular contents, and impairment in cellular methylglyoxal biosynthesis. In silico modeling confirmed the interaction of Ne-CNEO components with proteins associated with AFB1 production. Ne-CNEO provided remarkable protection against fungal inhabitation, AFB1 production, and lipid peroxidation without affecting organoleptic attributes. The non-toxicity of Ne-CNEO makes it a safe and effective alternative to synthetic preservatives in the food, agriculture, and pharmaceutical industries.
