Potential effects of mung bean protein and a mung bean protein-polyphenol complex on oxidative stress levels and intestinal microflora in aging mice

Shu Zhang et al.

Summary: The study showed that mung bean protein (MPI) and a MPI-polyphenol complex can delay aging in mice by reducing oxidative damage and regulating intestinal flora. There was a strong relationship between the abundance of intestinal flora and the levels of oxidative stress-related enzymes. The study provides theoretical support for the health and anti-aging benefits of mung bean food products.

Changes in structural and functional properties of globulin-polyphenol complexes in mung beans: exploration under different interaction ratios and heat treatment conditions

Shu Zhang et al.

Summary: This study investigated the interaction mechanism between mung bean protein and polyphenols, revealing a static quenching mechanism with mainly hydrophobic interactions. Heat treatment had little effect on binding sites but reduced antioxidant capacity. The emulsification and foaming ability of mung bean globulin-polyphenol complexes were significantly improved after heat treatment.

Study on the mechanism of mulberry polyphenols inhibiting oxidation of beef myofibrillar protein

Xiang Huang et al.

Summary: The research showed that mulberry polyphenols at a 0.5% addition level effectively inhibit the oxidation of myofibrillar protein and improve its physicochemical properties, but excessive addition can affect its gel properties. Therefore, in the production of meat products, both the addition level of polyphenols and the intensity of oxidation should be controlled simultaneously.

Dietary protein-phenolic interactions: characterization, biochemical-physiological consequences, and potential food applications

Qiaozhi Zhang et al.

Summary: The interactions between dietary proteins and phenolic compounds play a critical role in the physiochemical characteristics, nutritional, and quality attributes of food products. These interactions can impact stability, quality, and bioavailability of bioactive substances in different systems, and can be tailored to develop functional food and nutraceuticals with maximized functionality and quality attributes. The influences of these interactions are largely dependent on the chemical structures, environmental conditions, and preparation steps, highlighting the importance of understanding the mechanisms and applications of protein-phenolic interactions in food science and human nutrition.

Whey protein-polyphenol conjugates and complexes: Production, characterization, and applications

Waqas N. Baba et al.

Summary: Whey proteins are widely used in various food applications for their functional properties, but their performance can be limited due to factors like pH and temperature. Enhancing whey protein functionality through interaction with polyphenols, either through covalent or non-covalent bonds, can change their characteristics and allow for use as antioxidants, emulsifiers, and foaming agents in the food industry. Areas for future research in this field are also highlighted.

Effects of (-)-Epigallocatechin-3-gallate on the Functional and Structural Properties of Soybean Protein Isolate

Yaohui You et al.

Summary: In this study, soy protein isolate (SPI) was noncovalently modified by (-)-epigallocatechin-3-gallate (EGCG), leading to an improvement in its foaming, emulsifying, and antioxidant properties. The interaction between SPI and EGCG was found to involve hydrophobic force and hydrogen bonds, resulting in looser SPI structure and more active groups exposed. This modification process enhanced the functional properties of SPI significantly.

The effect of whey protein-puerarin interactions on the formation and performance of protein hydrogels

Yejun Zhong et al.

Summary: The study investigates the impact of protein-polyphenol interactions on the formation of heat-set protein hydrogels. It was found that hydrogen bonding was the main interaction between whey protein isolate (WPI) and puerarin (PUE). By altering the polyphenol concentration, the rheological properties of the hydrogels could be modulated, with increases in complex shear modulus, hardness, and resilience observed with higher PUE levels. This research offers valuable insights for fortifying functional foods with polyphenol-based nutraceuticals like puerarin.
