Synergistic Interaction Between Paired Combinations of Natural Antimicrobials Against Poultry-Borne Pathogens

Xiaoxia Liu et al.

Summary: This study investigated the antimicrobial activity and interactions of natural antimicrobials. The results showed that thymol exhibited the strongest inhibitory activity against multidrug-resistant pathogens, and it had a good synergistic effect with carvacrol. The improved evaluation method used in this study provides an accurate and comprehensive means to assess the synergistic effects of natural antimicrobials.

Antibacterial and antibiofilm effects of essential oil components, EDTA and HLE disinfectant solution on Enterococcus, Pseudomonas and Staphylococcus sp. multiresistant strains isolated along the meat production chain

Natacha Caballero Gomez et al.

Summary: This study found that strains of Enterococcus sp., Staphylococcus sp., and Pseudomonas sp. isolated from a goat and lamb slaughterhouse harbored multiple antibiotic resistance genes. The combination of natural essential oil components and disinfectant solution showed inhibitory effects on these multidrug resistant bacteria, providing potential strategies to reduce the spread of resistance in the food chain and environment.

Cocoa Spread with Grape Seed Oil and Encapsulated Grape Seed Extract: Impact on Physical Properties, Sensory Characteristics and Polyphenol Content

Ivana Loncarevic et al.

Summary: This study aimed to use grape pomace, a by-product of wine production rich in polyphenols, to make enriched cocoa spread. The formulation was modified by substituting refined sunflower oil with cold-pressed grape seed oil. The addition of grape seed extract encapsulated on maltodextrins further increased the polyphenols and flavonoids content. The sensory characteristics of the enriched spreads were positively affected by the encapsulates, reducing the grape seed oil aroma and sweetness.

The impact of food model system structure on the inactivation of Listeria innocua by cold atmospheric plasma and nisin combined treatments

Katherine M. Costello et al.

Summary: Novel processing methods like CAP and natural antimicrobials such as nisin are being explored to replace traditional food decontamination approaches, as they can maintain desirable food characteristics while being mild. However, microbial growth characteristics and food structure can impact the efficacy of these methods. The combination of nisin and CAP was found to be more effective than individual treatments, but only when nisin was applied before the CAP treatment.

The effect of ultrasound treatment in combination with nisin on the inactivation of Listeria innocua and Escherichia coli

Katherine M. Costello et al.

Summary: Ultrasound and nisin in combination have a synergistic effect on the inactivation of E. coli, but not on L. innocua. The order of treatment and system structure play a role in the efficacy of microbial inactivation. Sonication destabilizes the outer membrane, allowing nisin to penetrate the membrane and facilitate cell inactivation.
