Effect of Selenium-Enriched Substrate on the Chemical Composition, Mineral Bioavailability, and Yield of Edible Mushrooms

Diene France de Souza et al.

Summary: This article presents the latest discoveries in the production of selenium-enriched edible mushrooms and their potential as an alternative source of this mineral in human and animal diets. Selenized mushrooms have been shown to possess bioaccessible forms of selenium with antioxidant and anti-tumor activities, reducing blood cholesterol and glucose levels. However, the use of selenium-enriched substrates may impact yield and chemical composition, posing challenges to standardization and scale-up of production.

Structural characterization of polysaccharide purified from Hericium erinaceus fermented mycelium and its pharmacological basis for application in Alzheimer's disease: Oxidative stress related calcium homeostasis

Wenji Hu et al.

Summary: Purified polysaccharides from Hericium erinaceus fermented mycelium, known as PHEB, showed significant improvement in cognitive behavior of AD mice by alleviating oxidative stress through Nrf2 regulation. Furthermore, PHEB regulated calcium homeostasis in the brain by modulating CaMK II/IV, ultimately exhibiting anti-AD properties.
