Use of empirical and diffusion models in the description of the process of water absorption by rice

Summary: This study investigated the water absorption process of rice grains using diffusion and empirical models. Results indicated that Peleg model was most suitable for describing water absorption kinetics of rice without husk, while Silva et alii model showed the best statistical indicators for rice with husk. Additionally, a diffusion model with a boundary condition of the first kind demonstrated the best results in describing the kinetics of water absorption by rice grains, with and without husk.

Spatial distribution of sugars, organic acids, vitamin C, carotenoids, tocopherols, 6-methoxymellein, polyacetylenic compounds, polyphenols and terpenes in two orange Nantes type carrots (Daucus carota L.)

Summary: This study analyzed the primary and secondary metabolites in different parts of two orange carrots, highlighting the considerable variation in levels between tissues and sections. The peel was found to have higher levels of citric acid, gamma-tocopherol, 6-methoxymellein, falcarindiol, and most polyphenols and terpenes, while lower levels of sugars, alpha-tocopherol, and falcarinol. Lutein was mainly localized in the xylem. The sucrose, carotenoid, alpha-tocopherol, and falcarindiol acetate contents decreased from the top sections to the bottom sections. Most polyphenols showed similar patterns in the peel, while malic acid showed a similar pattern in the phloem. Falcarinol content decreased in the top sections of the phloem but increased in the xylem. No clear trend was observed for gamma-tocopherol and ascorbic acid.

Determination of thermal properties (and their uncertainties) during the cooling of apples (Malus communis)

Summary: The present study aimed to determine the thermal properties of apples during cooling. An optimizer software and a new heat conduction software were used to calculate and simulate the cooling process. The results showed that the spherical geometry and the boundary condition of the third kind were suitable for describing the cooling process of apples. The determined thermal properties can be used to accurately simulate pasteurization and freezing processes, and predict new cooling curves for products with different dimensions.

Determination of constant and variable thermal diffusivity of cashew pulp during heating: Experimentation, optimizations and simulations

Summary: Cashew apple, a highly perishable by-product generated during the production of roasted cashew kernels, can be transformed into pulp and pasteurized to increase its shelf life. Experimental results showed that by using the inverse method and taking into account the variation of local temperature, an accurate model for thermal diffusivity could be obtained, allowing for a good fit between simulation and experimental data.

Comparative analysis of ohmic and conventional heat-treated carrot juice

Summary: This study aimed to optimize the ohmic heating parameters for carrot juice and compare its characteristics with thermally treated and fresh juice. The results showed that the optimized parameters of 17 V/cm electric field strength and 40 s processing time produced a carrot juice with better stability and suitability for consumption. Ohmic heating is considered a potential alternative to traditional pasteurization methods for preserving the nutritional value of food products.
