Effect of atmospheric pressure non-thermal pin to plate plasma on the functional, rheological, thermal, and morphological properties of mango seed kernel starch

Summary: This study investigated the effect of atmospheric pressure non-thermal pin-to-plate plasma on the properties of mango seed kernel starch. The results showed that plasma treatment could significantly modify the pH values, turbidity, and hydrophilicity of the starch. The structural changes of starch were confirmed by SEM images and FTIR spectra. The findings have important implications for the stable and smooth textural development in food processing.

Large amplitude oscillatory shear (LAOS) measurements as a promising tool to predict electrospinnability of pectin solutions

Summary: This study investigated the correlation between the behavior of polymer solutions in the nonlinear region and the formation of smooth nanofibers, by testing solutions with different concentrations of pectin and molecular weights of PEO through deformation experiments. The results revealed the significant contribution of PEO (2000) to the elasticity of the polymer solution, suggesting that smooth fibers can only be achieved with this particular molecular weight, while beaded fibers were formed with PEO (600) and PEO (1000).
