Mass spectrometry analysis of saponins

Summary: Saponins are amphiphilic molecules with pharmaceutical interest, and their biological activities are related to their membranolytic properties. They are found in numerous plants and some marine animals. The high structural diversity of saponins makes their structural characterization challenging. This review provides an overview of the literature on the development of mass spectrometry for saponin study, showing the successful applications of various mass spectrometry methods in enriched extracts and tissue imaging.

Summary: This study presents sample extraction methods for solid and liquid samples to simultaneously quantify oat and pea saponins using HILIC-MS analysis. The developed extraction procedures for solid and liquid samples allowed for efficient and accurate analysis of oat- and pea-based food products. The use of internal standards ensured the precision and accuracy of the method for quantification of saponins in the samples.
