A Simple Method for Evaluating the Bioactive Phenolic Compounds' Presence in Brazilian Craft Beers

Summary: This study developed a simple method to evaluate the presence of phenolic compounds in Brazilian craft beers. The method exhibited good linearity, low detection and quantification limits, satisfactory accuracy, and precision. Catechin was found to be the predominant compound in the samples, and the presence of plant origin products contributed to the high concentrations of phenolic compounds in Brazilian craft beers.

Comparative Study on Phenolic Content and Antioxidant Activity of Different Malt Types

Summary: The study examined the brewing characteristics, phenolic content, and antioxidant potential of different malt types used in craft breweries in Bulgaria. Statistical analysis revealed a relationship between malt color and phenolic compound content, as well as a link between the content of Maillard reaction products and malt biological activity. Malts with the highest degree of heat treatment exhibited the highest antioxidant activity due to the presence of Maillard reaction products with antioxidant capacity.
