Incorporation of Buckwheat Flour at Different Particle Sizes and Distinctive Doses in Wheat Flour to Manufacture an Improved Wheat Bread

Summary: This study examined the impact of substituting wheat flour with different doses of buckwheat flour, based on particle sizes, on composite flour properties, dough rheology, and bread quality. The addition of buckwheat flour at specific doses provided optimal rheological properties in the dough. The composite flour with medium particle size had the highest nutritional value and sensory preference. The results of this research provide important insights for the future development of wheat-buckwheat bread applications.

Influence of Buckwheat Seed Fractions on Dough and Baking Performance of Wheat Bread

Summary: This study aimed to investigate the effects of buckwheat fractions on wheat flour, dough, and bread quality. The particle size of buckwheat seeds influenced the microstructure and molecular conformation. Adding an appropriate particle size of buckwheat fractions improved protein content in the flour, but excessive addition decreased dough and bread quality. Bread firmness, springiness, and gumminess were directly proportional to the level of buckwheat fraction addition.

Characterization of einkorn and durum wheat flours by GlutoPeak and evaluation of pasta quality made of various substitution ratios of einkorn

Summary: This study investigated the effects of replacing durum wheat with einkorn on the properties of flour and pasta. Results showed that einkorn had poor aggregation properties and resulted in darker pasta color. However, the einkorn blend used in this study was able to partially replace wheat flour and maintain acceptable cooking quality and texture.
