Evaluation of oilseed proteins as precursors of antimicrobial peptides using bioinformatics method

Summary: The potential of oilseed proteins as antimicrobial peptide precursors was assessed using bioinformatics. In silico hydrolysis resulted in the discovery of 34 novel potential AMPs, with 11 of them showing positive results in all four algorithm tests. Different proteases effectively generated AMPs from different oilseed proteins. Majority of the AMPs were predicted to be cationic peptides and some were hydrophobic. These findings provide a theoretical basis for further development of AMPs using oilseed proteins.

Sesamol can inhibit the formation of glycidyl ester in deep frying palm oil

Summary: Sesamol can effectively inhibit the formation of glycidyl ester (GE) in fried food, with a stronger inhibitory capacity compared to TBHQ. By inhibiting oil hydrolysis and oxidation, sesamol can prevent the formation of GE. In the frying process, a concentration of 0.10% sesamol is sufficient to inhibit the formation of GE.

Effects of free fatty acids and peroxide on thermal loss of sesamol and formation of its transformation products in soybean oil

Summary: This study investigated the loss and transformation mechanism of sesamol in soybean oil during heating process. The results showed that high temperatures, elevated FFAs, AV and POV accelerated the loss of sesamol. Volatilization was the main mechanism, while a small portion of sesamol was transformed into a sesamol dimer. The sesamol dimer exhibited better antioxidant ability than sesamol due to its higher proton activity and stable coplane structure.

Effects of ultrasound extraction on the physicochemical and emulsifying properties of rice bran protein

Summary: Rice bran protein prepared by ultrasound-assisted extraction showed excellent physicochemical and emulsifying properties. The ultrasound-assisted method increased protein yield and enhanced surface hydrophobicity, leading to improved emulsifying properties. Emulsions prepared using the protein samples exhibited great stability, although emulsifying properties showed a decrease trend with increasing ultrasound power and time. Overall, ultrasound-assisted extraction is a suitable alternative process for preparing rice bran protein.
