Bread preparation by partial replacement of wheat by germinated sorghum

Limited studies have reported the use of germinated sorghum flour for this purpose. The germination process improved the characteristics of sorghum flour, demonstrating its increased potential for the development of bakery and confectionery products. The process also significantly affected the properties of the flour and the quality of the bread.

Comparative metabolomic profiling of secondary metabolites in different tissues of Euryale ferox and functional characterization of phenylalanine ammonia-lyase

Summary: Secondary active substances have been widely used in various industrial fields due to their unique biological activities. Euryale ferox, also known as prickly waterlily, is an important commercial crop with numerous health functions, but information on its secondary metabolites is limited. In this study, 589 secondary active substances were identified in different tissues of E. ferox using UHPLC-MS/MS technique, with polyphenols being the predominant compound. Flavonoids were found to vary the most among the five tissues. The antioxidant evaluation revealed that the seed shell possessed excellent antioxidant properties. The study also demonstrated the remarkable activity of EfPAL4 in the biosynthesis of polyphenols and flavonoids through enzyme activity assays and overexpression in Arabidopsis. These findings provide important insights for the future industrial application of E. ferox.
