Dynamic changes in the chemical composition and metabolite profiles of drumstick (Moringa oleifera Lam.) leaf flour during fermentation

Summary: Using mixed strains in solid-state fermentation can significantly alter the chemical composition and metabolite content of Moringa leaf flour, with most metabolites showing higher concentrations after 3 days of fermentation. A total of 347 metabolites were identified through GC-TOF-MS analysis, including several intermediate metabolites detected in the 3-day fermented Moringa leaf flour. The metabolic activity of mixed microorganisms appears to peak after 3 days of fermentation under the tested conditions.

Characteristic components in the fermented barley aqueous extracts, including functional molecules, were identified through chemometrics analysis, providing insights for further research on functional bioactivities and applications.
