High-pressure processing inactivation of Salmonella in raw pet food for dog is enhanced by acidulation with lactic acid

Summary: The raw pet food market is experiencing rapid growth, driven by the perception of being natural and the potential health benefits. However, there are health concerns associated with raw pet food due to the presence of pathogenic bacteria such as Salmonella spp. High-pressure processing (HPP) is a non-thermal technology that can effectively eliminate microorganisms while preserving nutritional characteristics. The study evaluated the impact of pressure intensity, pressure-holding time, and lactic acid concentration on the inactivation of Salmonella spp. in chicken-based raw pet food. The results highlight the importance of processing parameters and intrinsic factors in ensuring the safety of pressurized raw pet food.
