Hydrothermal Treatment Effect on Antioxidant Activity and Polyphenols Concentration and Profile of Brussels sprouts (Brassica oleracea var. gemmifera) in an In Vitro Simulated Gastrointestinal Digestion Model

Joanna Doniec et al.

Summary: Different hydrothermal treatment methods significantly affect the concentration, composition, and antioxidant activity of polyphenolic compounds in Brussels sprouts. Boiling in water is the least effective, while sous-vide cooking is the best alternative for retaining polyphenols and maintaining high antioxidant activity. In vitro digestion showed a difference between the concentration of bioavailable polyphenolic compounds and the polyphenol content in the plant material.

Enzymatic treatments of raw, germinated and fermented spelt (Triticum spelta L.) seeds improve the accessibility and antioxidant activity of their phenolics

Marjeta Mencin et al.

Summary: Our study investigated the effect of different enzymes on the release of phenolic compounds from spelt seeds, and demonstrated the synergistic effect of enzymatic treatment, germination, and fermentation on the phenolic content and antioxidant activities of spelt. Enzymatic treatment successfully released bound phenolics, and combining enzymatic treatment with germination or fermentation increased the extractable phenolic content. Enzymatic treatment of raw seeds showed lower intracellular oxidation but higher uptake of hydroxycinnamic acids compared to the extractable fraction.

Simulated Gastrointestinal Digestion of Bioprocessed Spelt Seeds: Bioaccessibility and Bioactivity of Phenolics

Marjeta Mencin et al.

Summary: The goal of this research was to evaluate the impact of different bioprocessing techniques on the improved bioaccessibility of phenolics from spelt seeds. The study found that fermentation of germinated seeds significantly increased the bioaccessibility of total phenolics and their antioxidant activity compared to digested raw seeds. Enzymatic treated fermented seeds showed the highest relative bioaccessibility of p-coumaric and trans-ferulic acids, while their absolute contents were significantly higher in germinated + fermented seeds. The research suggests that pretreatment of spelt seeds with hydrolytic enzymes improves access of fermenting microorganisms to structural elements, resulting in an increased content of extractable and bound trans-ferulic acid. Some major quality changes in the composition of extracts were observed under simulated in vitro digestion, indicating the importance of increasing the content of extractable antioxidants in seeds by bioprocessing.

Evaluation of polyphenol bioaccessibility and kinetic of starch digestion of spaghetti with persimmon (Dyospyros kaki) flours coproducts during in vitro gastrointestinal digestion

Raquel Lucas-Gonzalez et al.

Summary: Adding persimmon flour can significantly improve the polyphenol profile of spaghetti, with an increase of around 2 to 3 times at 3% and 6% concentrations, respectively. The effects of cooking and digestion processes were found to impact the free polyphenol content more than the bound polyphenols. Additionally, spaghetti enriched with 3% persimmon flour showed a reduction in starch digestion kinetics, while 6% enriched spaghetti increased it.

Potential bioaccessibility of phenolic acids in whole wheat products during in vitro gastrointestinal digestion and probiotic fermentation

Wenfei Tian et al.

Summary: The health benefits of whole wheat products are partly due to their unique phenolic compounds, which can be released through simulated digestion and probiotic fermentation. More phenolic acids were released in the first hour of digestion, and Lactobacillus rhamnosus GG released additional phenolic acids during fermentation. The digestion method seems to provide a better estimate of phenolic acid composition in whole wheat products compared to chemical extraction.

Abiotic stress combinations improve the phenolics profiles and activities of extractable and bound antioxidants from germinated spelt (Triticum spelta L.) seeds

Marjeta Mencin et al.

Summary: The germination of spelt seeds under combined stress conditions significantly increased the total phenolics content and antioxidant activities, especially for bound phenolics. The most notable increases were observed in p-coumaric hexoside and p-coumaric acid, indicating that the biological conversion during germination plays a key role in antioxidant properties.
