Food proteins from animals and plants: Differences in the nutritional and functional properties

Li Day et al.

Summary: There are important differences in molecular structure, amino acid profile, digestibility, and technical functionality between animal and plant proteins, which impact their bioavailability and sensory quality. Plant-based foods provide less complete protein nutrition and may have deficiencies in essential amino acids compared to animal proteins. More research and innovation are needed to enhance the potential of plant proteins, and there may be synergistic effects between plant and animal proteins in creating nutritious and attractive foods.

Limited hydrolysis of glycosylated whey protein isolate ameliorates the oxidative and physical stabilities of conjugated linoleic acid oil-in-water emulsions

Meng Li et al.

Summary: The study showed that the utilization of hydrolysates of glycosylated whey protein isolate can effectively enhance the stability of conjugated linoleic acid emulsion, including reducing peroxide value and particle size, and increasing zeta-potential and interfacial adsorption rate.

Rheological and textural properties of acid-induced soybean protein isolate gel in the presence of soybean protein isolate hydrolysates or their glycosylated products

Lin Li et al.

Summary: The research showed that incorporating SPI hydrolysates reduced the elastic modulus and hardness of SPI gel, especially with lower molecular weight hydrolysates. Glycosylation partially mitigated the adverse effects of hydrolysates on gel formation, but did not improve gel quality compared to the control. These results provide insights into the influencing mechanism of SPI hydrolysates and their glycosylated products on SPI gel formation.

Structure and acid-induced gelation properties of soy protein isolate-maltodextrin glycation conjugates with ultrasonic pretreatment

Chengbin Zhao et al.

Summary: The study demonstrated that ultrasonic pretreatment can enhance the glycation reaction of SPI-MD conjugates, resulting in higher storage modulus and gel strength, but prolonged treatment may weaken the gelation properties.

In vitro digestion and cellular antioxidant activity of β-carotene-loaded emulsion stabilized by soy protein isolate-Pleurotus eryngii polysaccharide conjugates

Qiuhui Hu et al.

Summary: In this study, a stable oil-in-water emulsion was structured to effectively deliver beta-carotene through the Maillard reaction to prepare the SPI-PEP conjugate. Encapsulation of beta-carotene in the SPI-PEP conjugate-stabilized emulsion improved its bioavailability and antioxidant activity. Changes in the spatial structure of the conjugate led to increased water solubility and emulsibility, promoting lipid digestion and the formation of mixed micelles for improved bioavailability of beta-carotene.

Influence of soybean protein isolate-dextran conjugates on the characteristics of glucono-δ-lactone-induced tofu

Lin Li et al.

Summary: The research showed that the molecular weight of dextran is inversely related to the glycosylation level in SPI-dextran conjugates, affecting color and whiteness. The study also found that controlling glycosylation and choosing appropriate dextran molecular weight can improve the quality of SPI-dextran conjugate-added tofu.
