Influence of Citrus Essential Oils on the Microbiological, Physicochemical and Antioxidant Properties of Primosale Cheese

Gabriele Busetta et al.

Summary: The aim of this study was to produce a fresh ovine pressed cheese with the addition of citrus essential oils (EOs). The addition of citrus EOs increased the antioxidant capacity of the cheese and impacted its flavor. Among the sensory evaluation, the cheese enriched with 100 μL/L citrus EOs was the most preferred.

Green and Healthier Alternatives to Chemical Additives as Cheese Preservative: Natural Antimicrobials in Active Nanopackaging/Coatings

Rayssa Cruz Lima et al.

Summary: Traditional chemical additives as food preservatives may have negative impacts on human health, prompting worldwide public health institutes to encourage novel policies and more natural alternatives. This study reviews emerging preservative cheese methods, focusing on the use of natural antimicrobials to reduce microbial contamination in cheese and extend shelf life, while also considering factors like manufacturing ingredients, active coatings/packaging, and processing technologies. Emergent alternatives such as essential oils, polysaccharides, and enzymes show promise in antimicrobial action for preserving cheese quality parameters during shelf life, with future opportunities identified for further investigation into their potential toxicological effects.

Monitoring Commercial Starter Culture Development in Presence of Red Grape Pomace Powder to Produce Polyphenol-Enriched Fresh Ovine Cheeses at Industrial Scale Level

Pietro Barbaccia et al.

Summary: The study introduced red grape Nero d'Avola cultivar grape pomace powder (GPP) during fresh ovine cheese production to increase polyphenol content, showing that GPP did not influence the starter culture development but could increase the total phenolic compounds in cheese. The sensory evaluation indicated that GPP-enriched cheese was well appreciated by the judges, providing evidence of GPP as a suitable substrate to enhance total phenolic content in fresh ovine cheese.
