Acids in coffee: A review of sensory measurements and meta-analysis of chemical composition

Summary: This study conducted a systematic review and meta-analysis on the concentrations of organic acids (OAs) and chlorogenic acids (CGAs) in different types of coffee at various roast levels. The results showed that roasted robusta coffee contained more acidic compounds than arabica, and the concentration of CGAs decreased as the roasting level increased. Moreover, the increase in certain OAs with roast level might play a significant role in the sensory profile of dark roast coffees.

These emerging processes promote the reduction of bioactives such as caffeine and phenolics in coffee beans, but substantial improvement is needed to enhance their biological activities. Simplification and optimization of post-fermentation processes are crucial for easy accessibility and production of defect-free coffee beans.

Summary: The drying process affects the qualitative indicators of green coffees to varying degrees, with sun drying and heat pump drying resulting in comparable levels of CGAs and antioxidant activities. Specific CGAs, antioxidant activities, and color parameters are correlated among coffees. Heat pump drying at 50 degrees C is a viable alternative and possibly superior to sun drying for preserving certain desirable chemical and physical characteristics of green coffee, according to results from CGAs contents and PCA analysis.

Polyphenol contents of green coffee beans from different regions of Ethiopia
