A Tara Gum/Olive Mill Wastewaters Phytochemicals Conjugate as a New Ingredient for the Formulation of an Antioxidant-Enriched Pudding

Summary: Olive mill wastewater was used to synthesize an antioxidant macromolecule, which can be used as a functional ingredient in the preparation of functional puddings. The wastewater showed strong antioxidant properties and was successfully used to synthesize a polymeric conjugate with good toxicity characteristics and antioxidant performance. In comparison with non-functional counterparts, the wastewater exhibited better consistency and antioxidant features in the functional food.

These findings suggest the potential therapeutic use of MH in neuroinflammatory diseases.
