Summary: The aim of this study was to evaluate the applicability of metabolomics analysis of chicken breast muscle exudate in explaining differences in drip loss. The results showed that chickens with higher drip loss had heavier carcasses and their meat was more acidic, lighter, less red, and more yellow with higher levels of glucose and glycolytic potential. Additionally, the meat with higher drip loss had lower cooking loss, protein content, overall sensory quality, and higher lipid oxidation. Metabolomics analysis revealed that the group with higher drip loss exhibited increased metabolism of energy transformations in muscle tissue after slaughter, and differences between groups were related to 11 metabolic pathways, mainly carbohydrate metabolism. The results suggest that higher drip loss and deeper glycolysis may lead to the production of more methylglyoxal, which can alter muscle protein properties and contribute to an increase in drip loss.
