Encapsulation of Salmon Peptides in Marine Liposomes: Physico-Chemical Properties, Antiradical Activities and Biocompatibility Assays

Amine Hanachi et al.

Summary: Salmon byproducts are a valuable source of fatty acids and peptides for nutraceutical and health applications. By using enzymatic processes and membrane filtration, nanocarriers can be formulated to deliver these bioactive compounds. The properties of nanoliposomes were characterized, and the bioactivity of salmon peptides was assessed, showing antioxidant and antiradical activity. The nanostructures were found to be non-toxic and exhibited ACE inhibition activity.
