Analyzing the physical and biochemical changes in strawberries during storage at different temperatures and the development of kinetic models

Abhijeet B. Muley et al.

Summary: Freshly harvested strawberries were stored at different temperatures and assessed for physical and biochemical changes during storage. The results showed an increase in weight loss, pH, and reducing sugars, while a consistent reduction in various parameters. Kinetic models were developed for biochemical and physical parameters, with correlation equations developed between total color loss and biochemical parameters.

Kinetics of heat-induced changes in foods: A workflow proposal

M. A. J. S. van Boekel

Summary: The goal of kinetic modeling is to increase scientific understanding of the process under study and to predict product properties. The traditional two-step kinetic analysis method has its limitations, and a new workflow using nonlinear global regression on untransformed data is proposed in this article. The proposed method showed differences in parameter estimation compared to the classical two-step kinetic analysis, and demonstrated the advantages of multilevel modeling.

Food-derived antioxidants and COVID-19

Carmen Lammi et al.

Summary: COVID-19, caused by SARS-CoV-2, is a disease with strong transmission capacity and can lead to multi-organ disorder from asymptomatic to fatal consequences. Oxidative stress and inflammation are key factors in increasing COVID-19 severity, especially in the presence of chronic diseases associated with the fragility of the antioxidant system. Therefore, supplementation of antioxidants is considered a useful strategy against COVID-19.
