Incorporation of Solid Lipid Nanoparticles into Stirred Yogurt: Effects in Physicochemical and Rheological Properties during Shelf-Life

Summary: The aim of this study was to develop a yogurt fortified with curcumin by encapsulating it in solid lipid nanoparticles (SLNs). The incorporation of curcumin-loaded SLNs did not significantly affect the pH and titratable acidity of the yogurt during its shelf-life. However, the yogurt with SLNs showed slightly higher syneresis values and a stronger yellow color compared to the control. Overall, the addition of curcumin-loaded SLNs did not impact the physicochemical and rheological stability of yogurt during shelf-life, indicating a promising application for the development of new functional foods.

Effect of Drying Temperature on Physical, Chemical, and Antioxidant Properties of Ginger Oil Loaded Gelatin-Sodium Alginate Edible Films

Films dried at 25 degrees Celsius showed better performance in terms of moisture content, water solubility, swelling degree, water vapor permeability, mechanical, and optical properties. XRD and FTIR analysis confirmed the presence of electrostatic interactions between the ingredients, while antioxidant assays revealed comparable results with commercial antioxidants. The addition of sodium alginate and ginger essential oil improved the overall properties of the films.
