Summary: Dry beans are an important pulse consumed worldwide, with phenolic compounds in beans with colored coats found to be more efficient antioxidants. Total phenolic content can be considered as an indicator of antioxidant activity. These results provide a foundation for selecting dry beans with greater functional and nutritional interest for direct consumption, food formulations, or future breeding programs.

Impact of soil moisture on common bean (Phaseolus vulgaris L.) phytochemicals

Summary: The study found that compared to IWC, TD decreased seed yield by 13% for Rar'amuri and 20% for PS, while RI increased yield by 33% for Rar'amuri and 5% for PS. Principal component analysis showed that phytochemicals such as oligosaccharides, some phenolics, protein and resistant starch differentiated the RI treatment from TD and IWC. Additionally, partial least squarediscriminant analysis indicated that some compounds were associated with inhibitory capacity against digestive enzymes like alpha-amylase, α-glucosidase, and pancreatic lipase.
