Probing the impact of sustainable emerging sonication and DBD plasma technologies on the quality of wheat sprouts juice

Summary: Sonication and dielectric barrier discharge (DBD) plasma are sustainable emerging food processing technologies that have significant effects on wheat sprout juice. The application of DBD-plasma and sonication treatment resulted in an increase in chlorophyll, total phenolics, flavonoids, DPPH assay, and ORAC assay, as well as a decrease in polyphenol oxidase and peroxidase activities. The combination of these technologies also led to a reduction in microbial and enzymatic loads. Surface-enhanced Raman spectroscopy (SERS) was used to assess the impact of these emerging techniques on nutrient concentration, confirming improved quality and suitability for food processing.

Potential health risk of pesticide residues in greenhouse vegetables under modern urban agriculture: A case study in Beijing, China
