Textural modification of Chinese traditional stewed pig trotter: Effect of acid or alkaline-induced degradation of collagen fibers

Summary: This study investigated the effects of acid or alkaline treatments on the textural properties of Chinese traditional stewed pig trotter in relation to the degradation of collagen fibers. The acid or alkaline treatments improved the textural properties and promoted the unfolding of the secondary structure of collagen fibers. They also induced a breakage to the covalent cross-links. In conclusion, acid or alkaline treatments have positive effects on the textural modification of Chinese traditional stewed pig trotter through collagen degradation.

Effects of different mechanical processes on the structural and powdery properties of insoluble undenatured type II collagen

Summary: This study aimed to investigate the effects of different processes on insoluble undenatured type II collagen (IUC-II). The results showed that wet media milling (WMM) process had the best performance in terms of particle size, wetting rate, and suspension stability. However, all mechanical processes caused disruption of the triple helix structure of IUC-II. Low-acyl gellan gum (LAGG) could protect the triple helix structure and enhance the powdery properties of IUC-II treated by WMM process.

A structural explanation for protein digestibility changes in different food matrices

Summary: This study investigated the changes in protein digestibility in different food matrices and proposed a structural description of proteins responding to nanocrystalline cellulose (NCC) treatment. The conformational alterations of various samples were verified using variable-temperature X-ray diffraction (VT-XRD) and multi-spectroscopic methods. The results showed that NCC induced moderate unfolding and aggregation of distinct protein samples. The findings also highlighted the importance of matrix structures and composition in protein digestibility.

Structural and functional properties of collagen from tilapia scales pretreated by heat-assisted ionic liquids

Summary: This paper investigates the structural and functional properties of collagen from tilapia scales pretreated by heat-assisted ionic liquids. The results show that the solubility of collagen, exposure of chromophores, and regeneration of collagen subunits were all influenced by the heat-assisted IL pretreatments. The functional properties of regenerated collagen, including gel strength, viscosity, water-binding capacity, and emulsifying capacity, were also impacted by the different IL pretreatments.

New insights into the ultrasound impact on covalent reactions of myofibrillar protein

Summary: In this study, two different covalent reactions were compared to evaluate the strengthening effects of ultrasound treatment (UDT). The results showed that UDT destroyed the non-covalent interactions between myofibrillar protein (MPN) aggregates, and UDT-assisted free radical oxidation produced conjugates with better structural properties. After alkaline reaction, MPNs appeared as irregular spherical particles, while maintaining fibrous structure during free radical oxidation.
