Mimicking the Biological Sense of Taste In Vitro Using a Taste Organoids-on-a-Chip System

Jianguo Wu et al.

Summary: Researchers have developed a taste organoids-on-a-chip system that can highly mimic the biological sense of taste. This system can distinguish different tastes as well as varying concentrations of stimuli. It is expected to facilitate studies in food quality control, disease modeling, and drug screening.

The Role of D-allulose and Erythritol on the Activity of the Gut Sweet Taste Receptor and Gastrointestinal Satiation Hormone Release in Humans: A Randomized, Controlled Trial

Fabienne Teysseire et al.

Summary: This study investigated the importance of the gut sweet taste receptor (T1R2/T1R3) for the release of satiation hormones in response to D-allulose and erythritol. The results showed that D-allulose and erythritol stimulate the secretion of gastrointestinal satiation hormones in humans, and this effect is not mediated via T1R2/T1R3 in the gut. Additionally, erythritol delays gastric emptying and increases feelings of fullness.

Spatiotemporal dynamics of odor representations in the human brain revealed by EEG decoding

Mugihiko Kato et al.

Summary: This study investigates the spatiotemporal dynamics of olfactory perception in the human brain. The findings suggest that different aspects of olfactory perception, such as unpleasantness, pleasantness and perceptual quality, emerge at different time points after odor onset. The initial coding of odor information occurs in the olfactory areas, while the realization of perception involves computations in widely distributed cortical regions. This research provides insights into the neural processes underlying olfactory perception.

Summary: Sensory satisfaction is crucial for the acceptance of food products, with taste playing a major role. Traditional methods like market surveys and sensory panels cannot fully represent consumers' taste perception. Non-invasive devices and BCI techniques are being explored to sense and decode taste signals, showing potential as future sensory methods.

Enhancement of saltiness perception by odorants selected from Chinese soy sauce: A gas chromatography/olfactometry-associated taste study

Ting Zhou et al.

Summary: The odor-taste interaction is an effective method for salt reduction, where odorants associated with saltiness in soy sauce were identified and found to enhance saltiness and umami taste. These odorants, when added to food, significantly enhanced the perception of saltiness, indicating their potential use in compensating for reduced sodium chloride content in food.

Odor-Induced Saltiness Enhancement: Insights Into The Brain Chronometry Of Flavor Perception

Charlotte Sinding et al.

Summary: The study found that flavor perception results from the integration of odor and taste, with odors enhancing saltiness perception. The late cognitive P3 peak showed differences in amplitude and latency between solutions with and without odor, supporting the idea that high-level integratory areas process odor-taste interactions.

A Gut-Brain Axis-on-a-Chip for studying transport across epithelial and endothelial barriers

Min-Hyeok Kim et al.

Summary: Recent research indicates that the gut luminal environment can impact behavior, emotion, and cognitive abilities in the brain via various signaling pathways, with exosomes potentially mediating the communication. Advances in organ-on-a-chip technology have led to the development of a modular microfluidic chip for studying the interaction between the gut and the brain, which showed promise in facilitating the transport of exosomes across barriers. This model represents a novel in vitro approach to studying Gut-Brain Axis interactions.

On the road to the brain-on-a-chip: a review on strategies, methods, and applications

Summary: This article discusses the current state of brain-on-a-chip technology, highlighting the structural and biological features that a realistic in vitro brain should incorporate (and how to achieve them). In particular, two topological features, namely modular and three-dimensional connectivity, and a biological one (heterogeneity) are identified to take into account the huge number of neuronal types existing in the brain. At the end of the discussion, it is emphasized how interconnected-brain-regions-on-a-chip is the most appropriate phrase to describe the current state of the art.
